These corn fritters are flavored with green onion, cilantro, and Tex-Mex seasonings. Serve them along with just about any main meat, poultry, or fish, or serve them as a snack or appetizer. Serve them with chunky salsa or guacamole and sour cream, and garnish them with chopped cilantro or green onions.

Frozen steamed corn was used in the pictured fritters—cooked fresh corn kernels or drained canned are good alternatives. For extra heat and color, add a teaspoon or two of minced Fresno or red bell pepper to the batter.

Preparation Notes

The corn fritter mixture is simple, just a combination of a basic batter, seasonings, corn, green onion, and cilantro.

Cilantro and sliced green onions ad a pop of green color to the corn fritters. For extra color, add some chopped red bell pepper, or add a bit of heat with a tablespoon of finely chopped Fresno pepper.

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • Dash cayenne pepper
  • 1 large egg
  • 1/2 cup water
  • Juice of 1/2 lime
  • 3 tablespoons finely chopped green onion
  • 2 tablespoons chopped cilantro
  • 2 cups corn kernels (cooked and well-drained)

Instructions

  1. Combine the flour, baking powder, salt, cumin, and cayenne pepper in a medium mixing bowl. Mix well with a spoon or whisk until blended.
  2. Whisk the egg with the water and lime juice in another bowl.
  3. Add the water mixture to the dry ingredients and whisk until smooth.
  4. Stir the green onion, cilantro, and drained corn into the batter.
  5. Brush a large nonstick skillet with vegetable oil or spray it with nonstick cooking spray. Place the pan over medium heat.
  6. Drop the fritter batter onto the hot pan, using about 2 tablespoons for each fritter.
  7. Cook for about 4 to 5 minutes on each side or until browned and thoroughly cooked.
