Tex-Mex Corn Fritters

These corn fritters are flavored with green onions and cilantro. They’re great with salsa and sour cream or guacamole!

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • Dash cayenne pepper
  • 1 large egg
  • 1/2 cup water
  • Juice of 1/2 lime
  • 3 tablespoons finely chopped green onion
  • 2 tablespoons chopped cilantro
  • 2 cups corn kernels (cooked and well-drained)

Instructions

  1. Combine the flour, baking powder, salt, cumin, and cayenne pepper in a medium mixing bowl. Mix well with a spoon or whisk until blended.
  2. Whisk the egg with the water and lime juice in another bowl.
  3. Add the water mixture to the dry ingredients and whisk until smooth.
  4. Stir the green onion, cilantro, and drained corn into the batter.
  5. Brush a large nonstick skillet with vegetable oil or spray it with nonstick cooking spray. Place the pan over medium heat.
  6. Drop the fritter batter onto the hot pan, using about 2 tablespoons for each fritter.
  7. Cook for about 4 to 5 minutes on each side or until browned and thoroughly cooked.
