This one egg banana bread recipe is a snap to prepare and bake. It’s made with one egg, melted butter, and 3 bananas. If you don’t like nuts in banana bread, leave them out or replace them with dried fruit or chocolate chips.
I used brown sugar and chopped walnuts in the pictured banana bread.
Recipe Tips
- Use overripe bananas. The bananas should have lots of brown/black over the peel. If they are primarily yellow, you should leave them at room temperature for a few days—the length depends on their ripeness. If your bananas are ripe but lightly streaked with brown, add extra sugar and salt to compensate for the less-sweet bananas. Add 1 heaping tablespoon of sugar and 1/4 teaspoon of salt for this banana bread recipe.
- Combining the dry ingredients separately ensures they will be evenly mixed into the wet batter. Avoid overmixing, or you could end up with a tough, dense bread.
- Avoid overbaking. Test it with a skewer or toothpick—it should come out with a few moist crumbs, and no visible wet batter.
- Let banana bread cool in the pan for 10 to 15 minutes before removing it to a rack to cool completely.
- Store the bread in an airtight container to keep it moist, or freeze it.
