Ingredients
- 1 tablespoon vegetable oil
- 1 pound ground beef
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 pkt taco seasoning
- 1 lime, juiced
- 1 15-ounce can black beans, or pinto beans, drained and rinsed
- 8 ounces tortilla chips
- 1 cup tomatoes, diced, divided
- 4 green onions, thinly sliced, divided
- 12 ounces shredded cheddar cheese, or pepper jack cheese
- 2 cups lettuce, shredded
- 2 tablespoons chopped cilantro
- 2 tablespoons pickled jalapeño rings, or more
- Optional: sour cream, for serving
- Optional: guacamole, for serving
Instructions
- Preheat the oven to 375 F.
- Line a large rimmed baking sheet with parchment paper or nonstick foil.
- Heat the oil in a large skillet over medium heat. Add the beef, onion, and garlic and cook, stirring frequently, for about 5 to 7 minutes or until the beef is no longer pink. Drain and discard the excess fat.
- Add the taco seasoning, lime juice, and black beans to the ground beef. Stir to combine.
