Ingredients
1tablespoonvegetable oil
1poundground beef
1/2cupchopped onion
2clovesgarlic, minced
1 1.25-ouncepacket taco seasoning
Juice of 1 lime
1 15-ouncecan black beans, or pinto beans, drained and rinsed
8ouncescorn tortilla chips
1cupdiced tomatoes, divided
4green onions, thinly sliced, divided
12ouncescheddar jack or pepper jack cheese
2cupsshredded lettuce
2tablespoonschopped cilantro
2tablespoonsjalapeño rings, pickled, or more
Optional: sour cream, for serving

Instructions
Prevent your screen from going dark
Preheat the oven to 375 F.
Line a large rimmed baking sheet with parchment paper or nonstick foil.
Heat the oil in a large skillet over medium heat. Add the beef, onion, and garlic and cook, stirring frequently, for about 5 to 7 minutes or until the beef is no longer pink. Drain and discard the excess fat.
Add the taco seasoning, lime juice, and black beans to the ground beef. Stir to combine.
Spread the taco chips out on the large prepared baking sheet.
Spoon the ground beef and bean mixture evenly over the chips. Sprinkle half of the diced tomatoes and green onions over the ground beef. Sprinkle the cheese evenly over all.
Bake for about 12 to 15 minutes, or until the cheese is melted.
Top with the remaining diced tomatoes and green onions, shredded lettuce, cilantro, and jalapeno rings.
Serve with sour cream and/or guacamole on the side.
