Keto Broccoli Cheese Bites Recipe

keto broccoli bites on serving plates with appetizer forks.

I riced the broccoli in my blender (see below for instructions), but a box grater or a food processor also works well. Or you can buy packaged riced broccoli and skip that step. It’s very easy to prepare either way. Add some cauliflower to the broccoli if you like.

This is a very basic recipe; feel free to add an herb or spice blend to the mixture, or use pepper jack cheese instead of cheddar. Or you might grate a dash of nutmeg into the broccoli mixture.

How to Rice Broccoli or Cauliflower in a Blender

Put the broccoli or cauliflower florets in the blender. Fill the blender with cold water just deep enough to lift the vegetables above the blades. Pulse several times, or until the florets reach the desired consistency.

What You’ll Like About This Dish

Low-carb and keto-friendly. Perfect for snacking without spiking carbs.

Cheesy and satisfying. Sharp cheddar gives these bites great flavor.

Easy prep. Just mix, scoop, and bake — no complicated steps.

Make-ahead friendly. Keep a batch in the fridge for quick snacks.

Ingredient Notes

  • Broccoli – Fresh florets work best; ricing them gives the ideal texture.
  • Eggs – Bind the mixture so the bites hold together.
  • Sharp cheddar cheese – Adds richness, flavor, and structure.
  • Salt and pepper – Season to taste; a little goes a long way.

Steps to Make Keto Broccoli Cheese Bites

  1. Heat the oven and grease a mini muffin tin.
  2. Rice the broccoli in a food processor or blender.
  3. Whisk the eggs in a bowl.
  4. Stir in the riced broccoli, cheese, salt, and pepper.
  5. Spoon the mixture into the muffin cups.
  6. Bake until set and browned.
  7. Cool slightly, then loosen and remove the bites.
  8. Serve warm or chilled.

Tips

  • Rice the broccoli finely so the bites hold together better.
  • Use a mini cookie scoop for even portions.
  • Let the bites cool slightly before removing to avoid breakage.
  • Add a pinch of garlic powder or onion powder for extra flavor.

Recipe Variations

  • Add bacon. Crumbled cooked bacon adds smoky flavor.
  • Use different cheese. Monterey Jack, Pepper Jack, or gouda work well.
  • Make them spicy. Add red pepper flakes or a pinch of cayenne.
  • Try cauliflower. Swap broccoli for riced cauliflower for a variation.

Serving Suggestions

  • Serve warm as a snack or appetizer.
  • Pair with ranch, aioli, or your favorite keto dip.
  • Add them to lunchboxes for an easy protein boost.
  • Garnish with a sprinkle of cheese or herbs.

How to Store

Refrigerate: Store the cooled bites in an airtight container for up to 4 days. Reheat briefly for best texture.

Freeze: Freeze in a single layer, then transfer to a freezer bag for up to 2 months. Reheat in the oven or air fryer.

Reheat: Warm in a 350°F oven or air fryer until heated through and slightly crisp.
