These delicate little butter cookies are best known for their wafer-like appearance and lightly browned edge.

- 1 cup butter (softened)
- 2/3 cup granulated sugar
- 1 teaspoon vanilla extract or vanilla bean paste
- 2 large eggs (room temperature)
- 1 1/2 cups all-purpose flour (7 ounces)
- 1/4 teaspoon salt
- Preheat the oven to 350 F. Line baking sheets with parchment paper and set aside.
- In a mixing bowl with an electric mixer, beat the butter and sugar until light and fluffy.
- Add the egg and vanilla and beat until well blended.
- Add the flour and salt. With the mixer on low speed, beat until well mixed.
- Bake for 9 to 11 minutes, or until the cookies are lightly browned around the edges.
- Remove the cookies to racks to cool.
