The meat mixture in these little meatloaf muffins is a flavorful blend of seasonings. Oatmeal is an excellent alternative to plain dry breadcrumbs, and it gives meatloaf great texture. Ground beef or turkey with the oatmeal and seasonings has always been one of my favorite combinations. Garlic and Worcestershire sauce provide the flavor in this loaf along with finely chopped onions and a tasty ketchup topping. It’s a no-nonsense mixture that will please even the pickiest eaters. Feel free to tailor it to suit your family’s tastes. Omit the onion if you like, or cut back on the garlic.

The muffins are a fun option but feel free to make it in loaf form. Or, shape it and bake it on a rimmed baking sheet.

Ingredients

  • 1/2 cup onion (finely chopped)
  • 2 cloves garlic (pressed)
  • 1 1/2 pounds ground beef
  • 2/3 cup oats (quick or old-fashioned)
  • 1 cup ketchup (divided)
  • 2 teaspoons Worcestershire sauce
  • 1 large egg (lightly beaten)
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Heat the oven to 350 F. Spray a 12-cup muffin tin with cooking spray and line a rimmed baking sheet with foil. Place the muffin tin on the baking sheet.
  2. In a large bowl, combine the onion, garlic, ground beef, oats, 1/2 cup of the ketchup, the Worcestershire sauce, the egg, salt, and pepper. Mix until well blended.
  3. Scoop the meat mixture into the prepared muffin tin.
  4. Bake the meatloaf muffins for 25 minutes, or until they register at least 160 F on an instant-read thermometer inserted into the center of a muffin (If there is poultry in the meatloaf mixture, cook to 165 F). Add a spoonful of ketchup to each meatloaf muffin and cook for 5 minutes longer.
  5. Serve meatloaf muffins with mashed or baked potatoes and green beans or corn.

Notes

These meatloaf muffins freeze well; make a double batch and reheat them for quick lunches or dinners.
