These muffin meatloaves will be an instant hit with the whole family. The muffin shape makes classic meatloaf fun to bake, serve, and eat.

Ingredients

  • 1/2 cup onion (finely chopped)
  • 2 cloves garlic (pressed)
  • 1 1/2 pounds ground beef
  • 2/3 cup oats (quick or old-fashioned)
  • 1 cup ketchup (divided)
  • 2 teaspoons Worcestershire sauce
  • 1 large egg (lightly beaten)
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Heat the oven to 350 F. Spray a 12-cup muffin tin with cooking spray and line a rimmed baking sheet with foil. Place the muffin tin on the baking sheet.
  2. In a large bowl, combine the onion, garlic, ground beef, oats, 1/2 cup of the ketchup, the Worcestershire sauce, the egg, salt, and pepper. Mix until well blended.
  3. Scoop the meat mixture into the prepared muffin tin.
  4. Bake the meatloaf muffins for 25 minutes, or until they register at least 160 F on an instant-read thermometer inserted into the center of a muffin (If there is poultry in the meatloaf mixture, cook to 165 F). Add a spoonful of ketchup to each meatloaf muffin and cook for 5 minutes longer.
  5. Serve meatloaf muffins with mashed or baked potatoes and green beans or corn.

Notes

These meatloaf muffins freeze well; make a double batch and reheat them for quick lunches or dinners.
