- 1 medium onion, chopped
- 2 turkey breast tenderloins, cut into 1/2-inch pieces
- 2 cloves garlic, minced
- 1 teaspoon curry powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground turmeric
- 1/8 teaspoon ground cumin
- 1/8 teaspoon ground cayenne pepper
- 1/2 cup chicken stock
- 1 tablespoon tomato paste
- 1/2 cup raisins, optional
- 1/2 cup heavy cream (or half-and-half)
- 2 scallions, thinly sliced
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened and lightly browned, stirring frequently. Add the turkey and cook for about 6 minutes, or until turkey is lightly browned on all sides. Add the garlic and continue cooking for 3 minutes, stirring frequently.
- Add the salt, turmeric, cumin, cayenne, chicken stock, tomato paste, and raisins, if using. Cook, stirring, until the mixture simmers.
- Add the cream, stir to combine, and heat through.
- Serve with hot cooked rice and garnish with the thinly sliced scallions.
