Curry powder, turmeric, and cumin add flavor and color to this simple leftover turkey curry Serve the turkey with hot cooked rice.

Ingredients

  • 1 1/2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 turkey breast tenderloins, cut into 1/2-inch pieces
  • 2 cloves garlic, minced
  • 1 teaspoon curry powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground turmeric
  • 1/8 teaspoon ground cumin
  • 1/8 teaspoon ground cayenne pepper
  • 1/2 cup chicken stock
  • 1 tablespoon tomato paste
  • 1/2 cup raisins, optional
  • 1/2 cup heavy cream (or half-and-half)
  • 2 scallions, thinly sliced

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened and lightly browned, stirring frequently. Add the turkey and cook for about 6 minutes, or until turkey is lightly browned on all sides. Add the garlic and continue cooking for 3 minutes, stirring frequently.
  2. Add the salt, turmeric, cumin, cayenne, chicken stock, tomato paste, and raisins, if using. Cook, stirring, until the mixture simmers.
  3. Add the cream, stir to combine, and heat through.
  4. Serve with hot cooked rice and garnish with the thinly sliced scallions.
