Ingredients
  

  • 8 ounces cream cheese , softened
  • ½ cup confectioners' sugar
  • 4 tsp finely grated lemon zest, divided
  • 1 ½ tsp lemon juice
  • 2 pints strawberries, about 36 large berries
  • mint leaves (optional), for garnish

Instructions

  • In a mixing bowl with an electric mixer, combine cream cheese, confectioners' sugar, 2 teaspoons of lemon zest, and lemon juice. Beat until smooth; chill the filling for at least 1 hour.

  • Cut stems from strawberries, leaving a flat surface so they will stand on the cut end.
    2 pints strawberries
  • Cut a 'V' shaped pocket in the pointed end of each berry, cutting about two-thirds of the way through, leaving the bottom intact. Remove the 'V' shaped slice. Press sides apart gently so you can fill the strawberry with the cream cheese mixture.
  • Spoon the cream cheese mixture into a piping bag (or a zip-top bag with a small corner snipped off) and pipe the filling into the center of each berry. Use a star tip if you like, or no tip at all.
  • Arrange the strawberries on a platter and chill for 2 to 3 hours. Garnish with the remaining 2 teaspoons of lemon zest and mint leaves, if using.
