Ham salad is one of my favorite ways to use leftover baked ham. Stuff the ham salad into buns or bread for sandwiches or pile it onto lettuce leaves for a low carb alternative. A hard-boiled egg and sweet relish flavor the ham salad nicely while celery and some onion provide crunch. The hard-boiled egg is an excellent addition, but feel free to leave it out if you prefer. I like spicy Wickles relish in this, but any sweet pickle relish or dill relish will work just fine. Or use finely chopped pickles instead.

Ham salad rolls or sandwiches make a delicious lunch. Add a tossed salad or bowl of soup for a heartier meal. The chunky texture is perfect for sandwiches or mounding on lettuce, but feel free to use the food processor if you prefer a smoother, spreadable mixture for appetizers.

Leftover ham gets new life in this tasty ham salad. The mixture makes a delicious sandwich filling, or mound it on crisp lettuce leaves!

Ingredients

Scale
  • 2 cups finely chopped or minced ham
  • 1 large rib celery, finely chopped
  • 2 tablespoons finely chopped onion
  • 8 tablespoons mayonnaise, or to taste
  • 2 tablespoons sweet pickle relish or Wickles relish
  • 1 to 2 teaspoons pickle or Wickles juice
  • Dash freshly ground black pepper
  • 1 large hard-boiled egg, minced

Instructions

  1. Combine all ingredients in a medium bowl; mix well. For a smoother mixture, pulse in a food processor.
  2. Taste and adjust the mayonnaise and seasonings, as desired.
  3. Mound ham salad on lettuce leaves or use it as a sandwich filling.
