Ham Salad

Leftover ham gets new life in this tasty ham salad. The mixture makes a delicious sandwich filling, or mound it on crisp lettuce leaves!

Ingredients
  

  • 2 cups finely chopped or minced ham
  • 1 large rib celery, finely chopped
  • 2 tablespoons finely chopped onion
  • 8 tablespoons mayonnaise, or to taste
  • 2 tablespoons sweet pickle relish or Wickles relish
  • 1 to 2 teaspoons pickle or Wickles juice
  • Dash freshly ground black pepper
  • 1 large hard-boiled egg, minced

Instructions

  • Combine all ingredients in a medium bowl; mix well. For a smoother mixture, pulse in a food processor.
  • Taste and adjust the mayonnaise and seasonings, as desired.
  • Mound ham salad on lettuce leaves or use it as a sandwich filling.
