Ham Salad

Leftover ham gets new life in this tasty ham salad. The mixture makes a delicious sandwich filling, or mound it on crisp lettuce leaves!

Ingredients
  

  • 2 cups minced ham, or finely chopped
  • 1 large rib celery, finely chopped
  • 2 tbsp finely chopped onion
  • ½ cup mayonnaise, or to taste
  • 2 tbsp sweet pickle relish
  • 1 to 2 tsp pickle juice, to taste
  • tsp fine salt, or to taste
  • tsp freshly ground black pepper, or to taste
  • 1 large hard-boiled egg, minced
  • Lettuce leaves or bread (optional), for serving

Instructions

  • Combine the ham, celery, onion, mayonnaise, relish, pickle juice, salt, pepper, and minced hard-boiled egg in a medium bowl; mix well.
    2 cups minced ham | 1 large rib celery | 2 tbsp finely chopped onion | 1/2 cup mayonnaise | 2 tbsp sweet pickle relish | 1 to 2 tsp pickle juice | 1/8 tsp fine salt | 1/8 tsp freshly ground black pepper | 1 large hard-boiled egg
  • Taste and adjust the mayonnaise and seasonings, as desired.
  • Mound ham salad on lettuce leaves or use it as a sandwich filling.
