This super-easy beef and bean bake is topped with shredded cheese. The dish makes a complete and satisfying dinner when served with freshly baked biscuits and a tossed salad. The beans make an excellent side to go with barbecue, too.

Recipe Variations

  • For BBQ flavor, add 1/2 to 3/4 cup of your favorite barbecue sauce to the bean mixture.
  • Omit the cheese or use another cheese, such as a Mexican blend or spicy pepper jack cheese.
  • Replace the ground beef with ground turkey, sausage, or pork.
  • Replace the beef with 2 cups of leftover pulled pork or chicken from a rotisserie chicken.
  • Add heat to the beans with a minced hot pepper or cayenne pepper.

Ingredients

  • 1 pound lean ground beef
  • 1/2 cup chopped onion
  • 1/2 cup chopped red and green bell pepper
  • 1 large can pork and beans (28 to 32 ounces)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 to 1 cup shredded Cheddar cheese

Instructions

  1. Preheat the oven to 350 F.
  2. Lightly grease a 1 1/2-quart casserole.
  3. Place a large skillet over medium heat. Add the ground beef and cook, stirring and breaking up, for 2 minutes. Add the chopped onion and bell pepper and continue cooking until the onion is tender and the beef is browned and no longer pink. Drain well.
  4. To the beef mixture, add the beans. Add salt and pepper, to taste, and blend well. Transfer the mixture to the casserole dish.
  5. Bake in the preheated oven for 20 minutes, until hot and bubbling. Top with the cheese and continue baking for 2 to 3 minutes or until the cheese has melted. Alternatively, sprinkle cheese over each serving.
