What Are Cube Steaks?

Cube steaks are cuts of beef that have been tenderized by pounding with a meat mallet—usually the textured side—or with an electric tenderizer. The name comes from the cube-like indentations on the surface of the meat. The tenderizing makes the meat more tender and easier to chew. Cube steak is usually made from top round or top sirloin, cuts that are somewhat tough but flavorful.

Cube steaks in the market are sometimes so heavily texturized that they’re falling apart and more like ground beef than steaks. Choose 3/4-inch to 1-inch steaks and use the textured side of a meat mallet to tenderize them at home.

What To Serve With Barbecued Steaks

I like mashed potatoes and corn or green beans but feel free to build your meal with family favorite sides, like roasted or scalloped potatoes or potato salad and a side vegetable, baked beans, or coleslaw. Choose whatever you like to serve with barbecued meat.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 1/2 pounds top sirloin, round steak, or cube steak, cut into serving-size portions
  • Chicago steak seasoning, Montreal steak seasoning, or a similar grill seasoning
  • 2 medium onions, peeled, halved, and sliced
  • 1 cup ketchup
  • 2 teaspoons seasoned salt or more steak seasoning
  • 1/2 cup cider vinegar
  • 2 tablespoons light or dark brown sugar, packed
  • 1 1/2 tablespoons Dijon mustard or a grainy mustard
  • 1 1/2 tablespoons Worcestershire sauce

Instructions

  1. Lightly grease a 2-quart baking dish or spray with cooking spray.
  2. Heat oven to 325 F.
  3. Heat the vegetable oil in a large skillet over medium-high heat.
  4. Sprinkle the steaks with grill seasoning and brown them lightly on both sides. Remove the steaks to a plate.
  5. Add onions to the same skillet and cook until lightly browned, about 4 to 6 minutes.
  6. Combine the ketchup with 2 teaspoons of grill or steak seasoning, vinegar, brown sugar, mustard, and Worcestershire sauce. Pour about 1/2 cup of the sauce in the baking dish.
  7. Arrange about one-quarter of the onions over the sauce. Arrange some of the steaks over the sauce, spoon more of the sauce over each steak and sprinkle with half of the remaining onions. Repeat with the remaining steaks, topping with the remaining onions and sauce.
  8. Cover the baking dish tightly with foil and bake for 1 1/2 hours.
