  • 1 medium onion
  • 3 medium cloves garlic
  • 1 tbsp fresh ginger root
  • 1 cinnamon stick
  • ½ tsp ground cumin
  • ½ tsp crushed red pepper flakes
  • 1 tsp curry powder, or to taste
  • ½ tsp ground turmeric
  • ¼ tsp ground cardamom
  • teaspoon ground cloves
  • 3 pounds chicken thighs, bone-in, skin removed (or about 2 pounds boneless)
  • ½ cup low sodium chicken broth
  • Kosher salt, to taste
  • 2 tbsp cornstarch
  • 2 tbsp cold water
  • Coarsely chopped fresh cilantro, for garnish
  • 2 green onions (optional), sliced, for garnish

  • Peel the onion and slice it thinly. Mince the garlic cloves and grate the ginger root.

  • In the slow cooker, combine the sliced onion, minced garlic, grated ginger, cinnamon stick, cumin, red pepper flakes, curry powder, turmeric, cloves, and cardamom.

  • For deeper flavor, sauté the onion, garlic, ginger, and spices in a skillet for a few minutes before adding them to the slow cooker.
  • Arrange the chicken pieces over the onion and spice mixture and pour the broth over the chicken. Cover and cook on LOW for about 5 to 6 hours, or until the chicken is tender. Remove the chicken to a serving dish and keep warm.

  • Remove and discard the cinnamon stick. Taste the sauce mixture and add salt, as needed.

To serve, spoon the thickened sauce mixture over the chicken and garnish with fresh chopped cilantro and green onions, if desired.
