  • 4 tbsp duck fat, melted, or olive oil
  • 3 cloves garlic, minced
  • ¾ tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 1 to 2 tbsp minced fresh parsley or chives (optional)

  • Line a large rimmed baking sheet with foil.
  • Scrub the potatoes and peel, if desired. Cut them into 1-inch to 1 1/2-inch chunks and place them in a bowl.
