Ingredient Notes

  • Ground beef: Use 80/20 for the juiciest, most flavorful loaf.
  • Bread crumbs: Soft, finely ground crumbs help keep the meatloaf tender.
  • Egg: Binds the mixture so it slices neatly.
  • Ketchup: Adds moisture and sweetness inside the loaf and creates a glossy topping.
  • Dijon mustard: Adds a subtle tang that balances the ketchup.
  • Onion: Finely chop for even distribution and sweetness.
  • Red bell pepper: Adds color and mild flavor; any color pepper works.
  • Seasoning salt: Brings bold, well-rounded flavor without extra ingredients.
  • Black pepper and oregano: Add gentle warmth and herbiness.

Steps to Make Everyday Meatloaf

  1. Preheat the oven and prepare a loaf pan.
  2. Combine the ground beef, bread crumbs, egg, ketchup, mustard, onion, peppers, and seasonings.
  3. Mix thoroughly until well combined.
  4. Pack the mixture into a loaf pan or shape it in a shallow baking dish.
  5. Bake until nearly done.
  6. Spread the remaining ketchup on top.
  7. Bake briefly to glaze and finish cooking.

Tips

  • Use finely chopped vegetables so the loaf binds well.
  • Mix gently — overmixing can make the meatloaf dense.
  • Let the meatloaf rest for cleaner slices.
  • Use a meat thermometer to ensure it reaches 160 F.

Recipe Variations

  • Cheesy meatloaf. Add shredded cheddar or Monterey Jack to the mixture.
  • Bacon. Top the loaf with bacon before baking.
  • BBQ glaze. Top with barbecue sauce instead of ketchup.
  • Italian style. Add Parmesan and Italian seasoning.
  • Veggie boost. Mix in grated carrot or zucchini for extra moisture.
  • Spicy version. Add a pinch of crushed red pepper or use spicy ketchup.

Serving Suggestions

  • Serve with mashed potatoes, gravy, or buttered noodles.
  • Add roasted broccoli, green beans, or mixed vegetables.
  • Pair with cornbread or biscuits for a comforting meal.
  • Choose a fresh salad or coleslaw to lighten the plate.
  • Slice leftovers for easy sandwiches the next day.

How to Store

Refrigerate: Store in an airtight container for up to 4 days.

Freeze: Freeze whole or in slices for up to 3 months. Wrap tightly for best results.

Reheat: Warm gently in the oven or microwave. Add a splash of broth or water if needed to maintain moisture.
