Everyday Meatloaf

This no-frills meatloaf makes a fabulous, satisfying family dinner. Seasoned salt and chopped bell peppers add flavor and color.

Ingredients
  

  • 1 ½ pounds ground beef
  • 1 cup soft breadcrumbs
  • 1 large egg, beaten
  • ¾ cup ketchup, divided
  • 2 tsp Dijon mustard
  • ½ cup sweet onion, finely chopped
  • ¼ cup red bell pepper, finely chopped
  • 1 ½ tsp seasoning salt blend
  • ¼ tsp freshly ground black pepper
  • ½ tsp dried oregano

Instructions

  • Heat the oven to 350°F.
  • In a large bowl, combine the ground beef with the bread crumbs, beaten egg, 1/2 cup of ketchup, mustard, chopped onion and bell pepper, seasoning salt, pepper, and oregano. Mix until thoroughly blended.

  • Pack the beef mixture into a meatloaf pan or a 9-by-5-by-3-inch loaf pan.
  • Bake the meatloaf for 1 hour. Spread the remaining 1/4 cup of ketchup over the loaf and bake for about 10 to 15 minutes longer. Look for a temperature of at least 160°F (165°F if there is poultry in the meat mixture) on an instant-read thermometer inserted into the center.
