Ingredients

  • 2 cups all-purpose flour, 9 ounces
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar, optional
  • 2 tablespoons bacon drippings
  • 1 cup milk
  • 2 large eggs, beaten
  • 6 strips of bacon, cooked and crumbled

Instructions

  1. Heat oven to 400 F.
  2. Grease a 12-cup muffin pan; place it in the oven to heat while you make the muffin batter.
  3. Combine the flour with baking powder, salt, and sugar. Stir in bacon drippings, milk, and eggs, mixing just until moistened.
  4. Fold in the crumbled bacon.
  5. Spoon the batter into the hot muffin pan; bake for about 18 to 20 minutes, or until golden brown.
