Savory Bacon Muffins

Ingredients
  

  • 2 cups all-purpose flour, 9 ounces
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar, optional
  • 2 tablespoons bacon drippings
  • 1 cup milk
  • 2 large eggs, beaten
  • 6 strips of bacon, cooked and crumbled

Instructions

  • Heat oven to 400 F.
  • Grease a 12-cup muffin pan; place it in the oven to heat while you make the muffin batter.
  • Combine the flour with baking powder, salt, and sugar. Stir in bacon drippings, milk, and eggs, mixing just until moistened.
  • Fold in the crumbled bacon.
  • Spoon the batter into the hot muffin pan; bake for about 18 to 20 minutes, or until golden brown.
