Creamed turkey is an excellent way to use leftover turkey. The easy sauce is seasoned with some poultry seasoning, and artichokes, scallions, and pimientos add color.

Prep Time: 15 minutes
Cook Time: 12 minutes
Total Time: 27 minutes

  1. In a medium saucepan, melt the butter over medium-low heat. Add the white part of the scallions and the mushrooms. Cook, stirring, until mushrooms are tender. Add flour and stir until smooth and well blended. Continue cooking for 2 minutes, stirring constantly.
  2. Gradually add the chicken broth to the roux, stirring until thickened. Add the milk to the pan and stir to blend. Add the poultry seasoning, turkey, pimientos, artichokes, and the chopped green scallions. Season with salt and pepper, to taste. Continue cooking until thick and bubbling.
  3. Serve over hot baked puff pastry shells, split freshly baked biscuits, or toast points.
