Tex-Mex Corn Fritters

These corn fritters are flavored with green onions and cilantro. They're great with salsa and sour cream or guacamole!

Ingredients
  

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • Dash cayenne pepper
  • 1 large egg
  • 1/2 cup water
  • Juice of 1/2 lime
  • 3 tablespoons finely chopped green onion
  • 2 tablespoons chopped cilantro
  • 2 cups corn kernels, cooked and well-drained

Instructions

  • Combine the flour, baking powder, salt, cumin, and cayenne pepper in a medium mixing bowl. Mix well with a spoon or whisk until blended.
  • Whisk the egg with the water and lime juice in another bowl.
  • Add the water mixture to the dry ingredients and whisk until smooth.
  • Stir the green onion, cilantro, and drained corn into the batter.
  • Brush a large nonstick skillet with vegetable oil or spray it with nonstick cooking spray. Place the pan over medium heat.
  • Drop the fritter batter onto the hot pan, using about 2 tablespoons for each fritter.
  • Cook for about 4 to 5 minutes on each side or until browned and thoroughly cooked.
