Keto Broccoli Cheese Bites Recipe

These keto-friendly broccoli and cheese bites are baked in mini muffin tins. Keep some in the fridge for low carb snacks throughout the week.

Ingredients
  

  • Butter, for greasing the pan
  • 8 ounces broccoli, cut into florets
  • 2 large eggs
  • 8 ounces finely shredded sharp cheddar cheese
  • ¼ tsp kosher salt
  • tsp freshly ground black pepper, or to taste

Instructions

  • Heat the oven to 375 F.
  • Grease a mini muffin tin (24 wells),
    Butter
  • Rice the broccoli florets in the food processor, pulsing just until the pieces are about the size of grains of rice. If you don't have a food processor, you can finely chop the broccoli.

  • Whisk the eggs in a medium mixing bowl; add the riced broccoli, cheese, salt, and pepper. Mix thoroughly.
    2 large eggs | 8 ounces finely shredded sharp cheddar cheese | 1/4 tsp kosher salt | 1/8 tsp freshly ground black pepper
  • With a spoon or small cookie scoop, fill the muffin cups with the mixture.
  • Bake the broccoli bites in the preheated oven for 18 to 22 minutes, or until they are set and browned.
  • Remove the muffin tin to a rack and let the broccoli bites cool for about 6 to 8 minutes. Run a sharp knife or spatula around the edge of each mini muffin, then carefully lift it out.
