These corn fritters are flavored with green onions and cilantro. They’re great with salsa and sour cream or guacamole!

- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- Dash cayenne pepper
- 1 large egg
- 1/2 cup water
- Juice of 1/2 lime
- 3 tablespoons finely chopped green onion
- 2 tablespoons chopped cilantro
- 2 cups corn kernels (cooked and well-drained)
- Combine the flour, baking powder, salt, cumin, and cayenne pepper in a medium mixing bowl. Mix well with a spoon or whisk until blended.
- Whisk the egg with the water and lime juice in another bowl.
- Add the water mixture to the dry ingredients and whisk until smooth.
- Stir the green onion, cilantro, and drained corn into the batter.
- Brush a large nonstick skillet with vegetable oil or spray it with nonstick cooking spray. Place the pan over medium heat.
- Drop the fritter batter onto the hot pan, using about 2 tablespoons for each fritter.
- Cook for about 4 to 5 minutes on each side or until browned and thoroughly cooked.
