This is a super easy spinach pesto to whip up in your food processor or blender. It’s lovely with walnuts, but feel free to make it with pine nuts or toasted pecans.

Spinach Pesto
This easy spinach pesto makes a tasty spread for sandwiches and snacks. It also makes a delicious filling for chicken breasts.

- 1 cup basil leaves, packed, about 2 ounces
- 2 cups baby spinach leaves, packed, about 4 ounces
- 1/2 cup extra-virgin olive oil
- 1 cup coarsely chopped walnuts
- 1/3 cup freshly grated Parmesan cheese
- 2 cloves garlic, chopped
- salt and pepper, to taste
Instructions
- Add all ingredients to a food processor and pulse until smooth. Taste and add salt and freshly ground black pepper, to taste.
- Use it as an appetizer spread or dip or spread it over baked fish or chicken.
- The recipe makes about 2 cups, and it may be frozen in small portions.
