Spinach Pesto

This is a super easy spinach pesto to whip up in your food processor or blender. It’s lovely with walnuts, but feel free to make it with pine nuts or toasted pecans.

Ingredients
  

  • 1 cup basil leaves, packed, about 2 ounces
  • 2 cups baby spinach leaves, packed, about 4 ounces
  • 1/2 cup extra-virgin olive oil
  • 1 cup coarsely chopped walnuts
  • 1/3 cup freshly grated Parmesan cheese
  • 2 cloves garlic, chopped
  • salt and pepper, to taste

Instructions

  • Add all ingredients to a food processor and pulse until smooth. Taste and add salt and freshly ground black pepper, to taste.
  • Use it as an appetizer spread or dip or spread it over baked fish or chicken.
  • The recipe makes about 2 cups, and it may be frozen in small portions.
