Shrimp scampi probably isn’t the first dish you think of when you are looking for slow cooker recipes, but there are exceptions. This flavorful garlicky slow cooker shrimp scampi is an excellent example of how the appliance can be used for more delicate foods.
Shrimp scampi is fabulous served over rice or angel hair pasta, or serve it over spaghetti squash or cauliflower rice for a low carb meal. Garnish servings with shredded or grated Parmesan cheese or sprinkle fresh chopped parsley over the shrimp.

Shrimp is tossed with a flavorful garlic sauce and cooked perfectly in the slow cooker. All you have to do is add the ingredients to the pot and press the start button.

Ingredients
- 6 tablespoons unsalted butter
- 2 tablespoons extra-virgin olive oil
- 4 cloves garlic, finely minced
- 1 teaspoon paprika
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper (fresh ground)
- Pinch crushed red pepper flakes
- 1 1/2 pounds shrimp, peeled and deveined
- 1 tablespoon lemon juice
- Garnish: fresh chopped parsley
- Garnish: Parmesan cheese
Instructions
- In a slow cooker, combine the butter, olive oil, garlic, paprika, salt, pepper, and red pepper flakes.
- Cover the pot and cook on high for 20 minutes.
- Add the shrimp and stir to coat.
- Cover the pot and cook on high for 15 minutes. Add the lemon juice; stir and replace the cover. Cook for 5 to 10 minutes longer, or until the shrimp are opaque.
- Serve the shrimp with angel hair pasta or rice. Garnish with fresh chopped parsley and Parmesan cheese, if desired.
