This tasty rotini and ham salad is the perfect pasta salad for a summer luncheon or potluck dinner. Take it along to a cookout or picnic. Sliced ripe olives, red and/or green bell pepper, and red onions add flavor and color to the salad.

- 8 ounces rotini (or a similar pasta shape)
- 8 ounces diced cooked ham
- 1/2 cup chopped red onion
- 1/2 cup chopped bell pepper, red, green, or combination
- 1 can (4 ounces) sliced ripe olives (about 3 to 4 tablespoons)
- 1 tablespoon chopped parsley
- 1/2 teaspoon salt or seasoned salt, or to taste
- 1/2 teaspoon garlic powder
- 1/8 teaspoon freshly ground black pepper
- 6 basil leaves, chopped, optional
- 1 tablespoon sweet pickle relish
- 3/4 cup mayonnaise
Instructions
- Cook the rotini in boiling salted water following package directions. Drain the pasta and transfer it to a large bowl.
- Add the diced ham, onion, bell pepper, sliced olives, parsley, garlic powder, salt or seasoned salt, pepper, and basil. Toss to mix.
- In a small bowl, combine the relish and mayonnaise; blend thoroughly. Add more mayonnaise, if desired.
