I chose ground turkey thighs for these lettuce wraps, but if you are looking for leaner meat, you may use ground turkey breasts or a combination. Ground turkey thigh meat is more flavorful and a bit juicier, while ground turkey breast is leaner and an excellent option for low-fat diets.

What to Serve With Asian Turkey Lettuce Wraps

Turkey lettuce wraps make a fabulous appetizer, lunch, or dinner dish. Here are some ideas for side dishes that would go well with the wraps.

Preparation Notes

  • First gather all of the ingredients; measure them and set aside.
  • Rinse the green onions and discard the root ends. Or plant the root ends in your window box or garden—they will grow into new green onions!
  • Slice the green onions thinly, keeping the white and light green parts separate from the green ends.

  • Heat the peanut oil (or vegetable oil) in a sauté pan over medium heat and cook the ground turkey, breaking it up into small pieces as it cooks.
  • Add the chopped yellow onion and cook until they are translucent and the turkey is no longer pink.

  • Add the garlic, ginger, chili crisp, half of the peanuts, and the white parts of the green onions. Cook for 2 minutes, then taste and adjust the seasonings with extra hoisin or soy sauce, or more chili crisp.
  • Spoon the turkey mixture on lettuce leaves and top with the remaining peanuts and sliced green onion tops.

Recipe Variations

  • To replace the peanuts, add 1/2 cup of chopped water chestnuts and garnish with extra green onion tops.
  • Instead of lettuce leaves, serve the turkey mixture in small low-carb tortillas.
  • Use the turkey mixture to top a tossed salad.

How to Store Leftover Turkey Lettuce Wraps

  • Refrigerate any leftover ground turkey mixture in an airtight container and eat within 3 to 4 days.
  • To freeze, transfer the completely cooled Asian-seasoned turkey mixture to a freezer container or a resealable freezer bag. Label the container or bag with the name and date. For best quality, freeze for up to 3 months.

Ingredients

  • 3 green onions
  • 1 tablespoon peanut oil
  • 1 pound ground turkey
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons hoisin sauce
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 to 2 teaspoons chili crisp or Asian chili sauce, such as Sriracha
  • 1/3 cup roasted peanuts, coarsely chopped, divided
  • Lettuce leaves, about 10 to 12

Instructions

  1. Slice the green onions thinly, keeping the white and light green parts in separate bowls. Set aside.
  2. Heat the peanut oil in a sauté pan over medium heat. Add the ground turkey and break it up into smaller pieces. Let it cook undisturbed for about 2 minutes, then add the chopped yellow onion and continue cooking, stirring frequently, until the onions are translucent and the turkey is no longer pink, about 4 to 5 minutes longer.
  3. Add the garlic, ginger, chili crisp, about half of the chopped peanuts, and white parts of the green onions and cook for 3 minutes longer.
  4. Add the hoisin sauce, soy sauce, and vinegar and cook for 2 minutes. Taste the mixture and adjust the seasonings and sauces to suit your taste.
  5. Serve the turkey on lettuce leaves garnished with the remaining chopped peanuts and green onion tops for a delicious low-carb meal.
