These ranger cookies have long been an American family favorite. Ingredients include chocolate chips, coconut, cornflakes, oats, and optional chopped nuts.
1 cup semisweet chocolate chips (or milk chocolate)
1/2 cup chopped pecans (optional)
powdered sugar
Instructions
Heat the oven to 350 F.
Line cookie sheets with parchment paper or silicone baking mats. Alternatively, lightly grease the pans.
In a mixing bowl with an electric mixer, beat the butter with the granulated and brown sugars. Blend in the eggs, one at a time, beating well after each addition. Add the vanilla and blend well.
In a separate bowl, combine the flour, baking soda, baking powder, and salt.
Add the dry ingredients to the first mixture; blend well.
Stir in the rolled oats, corn flakes, coconut, chocolate chips, and pecans.
Shape the dough into balls about 1 inch in diameter. Roll the dough balls in powdered sugar and arrange on the baking sheet.
Gently press the balls of dough down with the tines of a fork.
Bake the cookies for 12 to 15 minutes, or until set and lightly browned on the bottoms.
