These ranger cookies have long been an American family favorite. Ingredients include chocolate chips, coconut, cornflakes, oats, and optional chopped nuts.

Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup brown sugar, firmly packed
  • 2 eggs, beaten
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups quick-cooking rolled oats
  • 2 cups corn flakes
  • 1 cup sweetened flaked coconut
  • 1 cup semisweet chocolate chips (or milk chocolate)
  • 1/2 cup chopped pecans (optional)
  • powdered sugar

Instructions

  1. Heat the oven to 350 F.
  2. Line cookie sheets with parchment paper or silicone baking mats. Alternatively, lightly grease the pans.
  3. In a mixing bowl with an electric mixer, beat the butter with the granulated and brown sugars. Blend in the eggs, one at a time, beating well after each addition. Add the vanilla and blend well.
  4. In a separate bowl, combine the flour, baking soda, baking powder, and salt.
  5. Add the dry ingredients to the first mixture; blend well.
  6. Stir in the rolled oats, corn flakes, coconut, chocolate chips, and pecans.
  7. Shape the dough into balls about 1 inch in diameter. Roll the dough balls in powdered sugar and arrange on the baking sheet.
  8. Gently press the balls of dough down with the tines of a fork.
  9. Bake the cookies for 12 to 15 minutes, or until set and lightly browned on the bottoms.
  10. The recipe makes about 5 dozen ranger cookies.
