These pickled onions take just minutes to make, and they are wonderful on burgers and sandwiches or in salads. They’re great on tacos, too!

Feel free to customize the pickling liquid with your favorite spices, such as coriander seeds, mustard seeds, or sprigs of fresh herbs.

These pickled onions take just a few minutes of prep time. Use them on burgers, sandwiches, salads, or tacos.

Ingredients

Scale
  • 1 medium red onion
  • 2/3 cup apple cider vinegar
  • 1/3 cup water
  • 3 tablespoons granulated sugar
  • 1 teaspoon kosher salt
  • 1/2 teaspoon whole black peppercorns
  • Dash crushed red pepper flakes, optional

Instructions

  1. Peel the onion, cut in half, and slice thinly.
  2. Pack the onion slices in a 1-pint jar or non-reactive container.
  3. Combine the remaining ingredients in a saucepan and bring to a boil. Stir until the sugar has dissolved.
  4. Pour the hot liquid over the onions in the jar.
  5. Let the onions cool, then cover the jar and refrigerate.
  6. Use on sandwiches, as a condiment, with appetizer spreads, etc.
