This is the perfect slaw to serve on fish tacos or along with a Mexican meal. I like it on pulled pork or chicken, and it’s also excellent on fajitas.

The purple cabbage should be shredded thinly with a mandoline if you have one. Or cut the cabbage into wedges, remove the tough core, and slice the wedges crosswise as thinly as possible.

Purple Slaw With Cilantro Lime Dressing

This easy purple slaw is the perfect topping for shrimp or fish tacos. It’s great on chicken tacos, too!

Ingredients

Scale
  • 1/2 small head red cabbage
  • 1/4 small head green cabbage
  • 1 small carrot
  • 4 green onions
  • 2 tablespoons fresh chopped cilantro
  • 1/3 cup lime juice, about 2 limes
  • 3 teaspoons sugar
  • 1/4 cup peanut oil or another neutral flavor oil
  • salt and pepper, to taste
  • 1/2 to 1 teaspoon chili garlic paste, or to taste

Instructions

  1. Shred the red and green cabbage and toss them together in a large bowl.
  2. Shred the carrots and chop the green onions and cilantro; add them to the cabbage mixture.
  3. In another bowl, combine the lime juice, sugar, peanut oil, salt and pepper, to taste, and chili garlic paste, if using.
  4. Pour the dressing mixture over the salad.
  5. Cover and refrigerate until thoroughly chilled.
