- 8 ounces elbow macaroni or shells
- 4 hard-boiled eggs, diced
- 1 small cucumber, seeds removed, diced
- 1 cup diced cooked ham
- 3/4 cup diced celery
- 1/4 cup finely chopped red onion
- 1 tablespoon chopped parsley
- 3/4 cup mayonnaise
- 2 teaspoons lemon juice
- 2 tablespoons sweet pickle relish
- 1/2 teaspoon celery salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon salt, or to taste
Instructions
- Cook macaroni following package directions; drain well in a colander and rinse with cold water.
- In a large bowl, toss diced eggs with cucumber, ham, celery, onion, parsley, macaroni, and relish.Stir in the remaining ingredients, blending well and adding more salt, if needed.
- Cover and chill thoroughly.
- Sprinkle with extra chopped fresh parsley, if desired.
