These cream cheese-filled strawberries are the ideal treat to serve at a summer party or cookout. Just prepare them and refrigerate them until serving time. Lemon zest and juice flavors the sweetened cream cheese perfectly. If you prefer orange flavor, use orange juice and zest. Or you might add a splash of complementary liqueur instead of the juice. Limoncello, Cointreau, and Grand Marnier are good choices for an adult party.

These lemon cream filled strawberries are the perfect treat for a summer celebration. Lemon zest and sweetened cream cheese are combined and piped into the split berries.

Ingredients

  • 1 (8-ounce package cream cheese (softened)
  • 1/2 cup powdered sugar
  • 2 teaspoons finely grated lemon zest
  • 1 1/2 teaspoons lemon juice
  • 2 pints strawberries, about 36 large berries
  • Optional garnish: lemon zest or mint

Instructions

  1. In food processor or a mixing bowl with an electric mixer, combine cream cheese, powdered sugar, lemon zest, and lemon juice. Process or beat until smooth; chill for at least 1 hour.
  2. Cut stems from strawberries, leaving a flat surface so they will stand on the cut end.
  3. Cut a ‘V’ shaped pocket in the pointed end of each berry, cutting about two-thirds of the way through, leaving the bottom intact. Remove the ‘V’ shaped slice. Press sides apart gently so you can fill the strawberry with the cream cheese mixture.
  4. Spoon the cream cheese mixture into a pastry bag and pipe filling into center of each berry. Use a fancy star tip or no tip at all.
  5. Chill for at least 3 hours. Garnish with mint leaves or extra lemon zest, if desired.
