Rice the broccoli florets in the food processor or blender (see below).
Whisk the eggs in a medium mixing bowl; add the riced broccoli, cheese, salt, and pepper. Mix thoroughly.
With a spoon or small cookie scoop, fill the muffin cups with the mixture.
Bake the broccoli bites in the preheated oven for 18 to 22 minutes, or until they are set and browned.
Remove the muffin tin to a rack and let the broccoli bites cool for about 6 to 8 minutes. Run a sharp knife or spatula around the edge of each mini muffin and carefully lift them out.
