A spicy Creole-style tomato sauce flavors these easy baked halibut fillets. Make it mild or add extra hot sauce for a spicier sauce!

Ingredients

  • 4 strips bacon
  • vegetable oil, as needed
  • 2 tablespoons all-purpose flour
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 medium green bell pepper, thinly sliced
  • 2 teaspoons Creole or Cajun-style seasoning
  • 2 cans (14.5 ounces each) diced tomatoes
  • 1/2 cup chicken broth
  • 1 teaspoon Worcestershire sauce
  • Tabasco sauce, to taste
  • 1 1/2 pounds halibut fillets
  • 2 tablespoons butter, melted

Instructions

  1. Cook the bacon in a medium saucepan until crisp; remove to paper towels to drain. Crumble and set aside.
  2. Discard all but 2 tablespoons of bacon drippings or add oil, if necessary, to make 2 tablespoons.
  3. Add the flour to the drippings; continue to cook over medium heat, stirring constantly, until the roux mixture is medium brown.
  4. Add the chopped vegetables all at once and continue cooking over medium heat for about 5 minutes, stirring frequently.
  5. To the roux mixture, add the Creole seasoning, tomatoes, chicken broth, the Worcestershire sauce, and a few dashes of Tabasco sauce. Simmer the mixture for about 15 to 20 minutes, or until thickened, stirring occasionally.
  6. Meanwhile, preheat the oven to 350 F.
  7. Butter a large baking dish.
  8. If the halibut fillets are large, cut into four serving portions.
  9. Arrange the fillets in the buttered baking dish and brush or drizzle with 2 tablespoons of melted butter.
  10. Place halibut in the oven and bake for 10 minutes.
  11. Spoon the tomato and vegetable mixture over the fish and bake for 10 to 15 minutes longer, or until fish flakes easily with a fork.
  12. Sprinkle the reserved bacon over the fillets and serve with baked potatoes or rice.
