- 2 pounds sauerkraut, rinsed and drained
- 2 pounds kielbasa, sliced into 1-inch pieces
- 2 large tart apples, cored, peeled, thinly sliced
- 1 medium onion, halved, thinly sliced
- 1/2 cup apple juice or cider
- 1/2 cup brown sugar, packed
- 1 tablespoon whole grain mustard
- 1 tablespoon caraway seeds, optional
- kosher salt and freshly ground black pepper, to taste
Instructions
- Lightly grease the bottom and sides of the slow cooker.
- Combine the sauerkraut, smoked sausage, sliced apples, and onions in the slow cooker.
- In a bowl, combine the apple juice, brown sugar, mustard, caraway seeds, if using, and the salt and pepper. Pour over the sauerkraut and sausage mixture; stir to blend ingredients.
- Cover and cook on LOW for 5 to 7 hours (HIGH for about 3 hours).
