- 2 to 3 tablespoons crumbled cooked bacon
- 1/3 cup raisins or dried cranberries (craisins)
- 1 rib celery, diced
- 1/4 cup chopped red onion
- 2 green onions, thinly sliced
- 2 to 3 tablespoons chopped pecans, optional
- 1/2 to 3/4 cup mayonnaise
- 1 teaspoon lemon juice
- salt and pepper, to taste
Instructions
- In a medium bowl, combine the chicken, bacon, raisins, celery, red onion, green onion, and pecans, if using.
- Add about 1/2 cup of the mayonnaise and the lemon juice; stir until well blended.
- Taste and add more mayonnaise and the salt and pepper, to taste.
