Quick Chicken Salad Sandwiches
These easy chicken salad sandwiches are made with canned chunk chicken, and makes enough for 4 generous, great tasting sandwiches.

Canned chicken and fresh chopped vegetables make these chicken salad sandwiches quick and easy. The recipe is versatile, too. Add chopped hard-boiled eggs, scallions, dill or sweet pickle relish, or fresh chopped herbs. Or season the chicken salad with curry powder or a seasoning blend and add dried fruit or sliced grapes. I love the sandwiches in soft toasted buns or New England hot dog rolls. These chicken salad sandwiches are an excellent choice for a quick lunch!
Quick Chicken Salad Sandwiches
Ingredients
- 4 tablespoons mayonnaise
- ground black pepper
- 2 cans, about 5 ounces each chunk chicken, drained
- ¼ cup chopped celery
- 1 tablespoon finely chopped onion
- 8 slices bread
- 4 thin slices of a large tomato
- 4 romaine or iceberg lettuce leaves
Instructions
- In a medium bowl, combine the mayonnaise and pepper. Add the chicken, chopped celery, and onion. Mix well.
- Divide the chicken mixture evenly among 4 of the bread slices and spread to cover each slice of bread. Top with a tomato slice, lettuce leaf, and remaining bread slices.
