Chicken Burritos, Oven or Slow Cooker
These chicken burritos are assembled, wrapped in foil, and then heated in the slow cooker or oven. Or keep them warm in the slow cooker for serving.
This is a great way to feed a family guests. For a party, keep the foil-wrapped chicken burritos warm in the slow cooker or oven and offer lots of garnishes and sauces. Scale the recipe up for several guests or freeze leftover burritos.
For a party or gathering, keep the wrapped burritos in the slow cooker on warm for serving.
Chicken Burritos, Oven or Slow Cooker
Ingredients
- 2 cups chopped or shredded cooked chicken
- 1- ounce packet burrito or taco seasoning
- 1 can, 16 ounces refried beans
- 6 flour tortillas
- 8 ounces shredded Cheddar Jack cheese, or Mexican cheese blend
- 3 plum tomatoes, finely chopped
- 1/2 cup minced onion
- 1 cup tomato salsa, for serving
Instructions
- In a bowl, combine the chopped chicken and burrito or taco seasoning mix; toss to blend.
- Spread the refried beans over the tortillas, dividing evenly among the 6 tortillas. Top the tortillas with the seasoned chicken, some of the shredded cheese, chopped tomatoes, and minced onions. Roll up, tucking the ends in to secure the filling.
- Wrap each burrito in foil and arrange in a slow cooker, stacking if necessary. Cover and cook on HIGH for about 1 1/2 hours. Alternatively, place the wrapped burritos in a baking pan and heat in a 350 F oven for about 20 to 25 minutes.
- Serve with salsa and guacamole or your choice of garnishes.
