Candied Sweet Potatoes With Bourbon

Ingredients

  • 3 pounds sweet potatoes
  • 1/4 cup light corn syrup (or Lyle’s Golden Syrup)
  • 1/2 cup brown sugar
  • 1/4 cup Kentucky bourbon, good quality
  • Kosher salt and pepper (to taste)
  • Optional garnish: chopped fresh parsley or cilantro

Instructions

  1. Heat the oven to 350 F. Butter a large shallow baking dish.
  2. Peel the sweet potato and cut them into chunks, Place them in a saucepan and cover with water; bring to a boil over medium-high heat. Lower the heat and simmer for about 7 to 9 minutes, or until just tender. Drain them thoroughly and let them cool slightly.
  3. Arrange the sweet potatoes in the prepared baking dish. Combine the remaining ingredients (except parsley) and pour over the sweet potatoes.
  4. Bake in the preheated oven for 20 to 30 minutes, or until hot and bubbling.
  5. Garnish with parsley or cilantro, if desired.

Notes

Kentucky bourbon adds spirit to these delicious candied sweet potatoes. The sweet potatoes are lightly cooked on the stovetop and finished in the oven.
