  • 1 1/2 pounds 85% ground beef
  • 2 ounces (1/2 cup) shredded mozzarella cheese
  • 1/2 cup soft bread crumbs
  • 2 tablespoons barbecue sauce, plus more for brushing on the burgers
  • 1/2 teaspoon freshly ground black pepper
  • 4 hamburger buns
  • 4 slices mozzarella cheese, optional
  • Dill pickle slices, lettuce, tomatoes, bacon, onion slices, optional

Instructions

  1. Combine the ground beef, mozzarella cheese, bread crumbs, barbecue sauce, and pepper. Shape into 4 burgers (or 8 smaller slider-size burgers).
  2. Heat a grill pan over medium-high heat on the stovetop or prepare an outdoor gas or charcoal grill for direct medium-high heat.
  3. Grill for about 5 minutes on each side, or until the burgers are cooked through and at least 160 F in the center (well doneā€”USDA minimum safe temperature). If you prefer medium, cook the burgers to 145 F.
  4. Brush with more barbecue sauce at the last minute or two, if desired.
  5. Place a piece of mozzarella cheese on the burgers and continue heating until the cheese has melted.
  6. Toast the buns, if desired, and fill with the burgers and toppings.
