Ingredients

Scale
  • 2 cups all-purpose flour (9 ounces)
  • 2 teaspoons baking soda
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1 large egg
  • 3/4 cup milk
  • 5 tablespoons butter (melted)
  • 1 cup fresh blueberries or thawed and well drained frozen blueberries
  • powdered sugar for dusting, optional

Instructions

  1. Heat oven to 350 F.
  2. Grease and flour an 11-by-7-inch baking pan.
  3. In a bowl, combine the flour, baking soda, sugar, salt, allspice, nutmeg, and cloves. Stir with a spoon or whisk to blend thoroughly.
  4. In another bowl, whisk together the egg, milk, and melted butter. Stir the milk mixture into the dry ingredients just until moistened. Fold in the blueberries.
  5. Spread the batter in the prepared baking pan.
  6. Bake for 25 to 30 minutes, or until the cake is lightly browned and a toothpick comes out clean when inserted into the center.
