These bars are made with melted butter, brown sugar, and chocolate chips. I like walnuts in butterscotch bars, but pecans would work as well, or leave the nuts out altogether. They’re great lunchbox treats!
Feel free to make them with your favorite add-ins. Replace the semisweet chips with milk chocolate or white chocolate chips, or use brickle or toffee chips.

- 2/3 cup melted butter
- 2 1/4 cups light brown sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 2 3/4 cups flour
- 1/2 teaspoon salt
- 2 1/2 teaspoons baking powder
- 1 cup chopped walnuts
- 1 cup semisweet chocolate chips
Instructions
- Heat the oven to 350 F. Grease and flour 1- x 15-inch jelly roll pan.
- In a mixing bowl with an electric mixer, beat the butter and brown sugar together until smooth and well blended. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla.
- Sift together the dry ingredients and add to the butter and sugar mixture. Stir until well blended.
- Fold in the nuts and chocolate chips.
- Spread the batter in the prepared pan and bake for 20 to 25 minutes, until set and golden brown.
