- 3 pounds sweet potatoes
- 1/4 cup light corn syrup (or Lyle’s Golden Syrup)
- 1/2 cup brown sugar
- 1/4 cup Kentucky bourbon, good quality
- Kosher salt and pepper (to taste)
- Optional garnish: chopped fresh parsley or cilantro
Instructions
- Heat the oven to 350 F. Butter a large shallow baking dish.
- Peel the sweet potato and cut them into chunks, Place them in a saucepan and cover with water; bring to a boil over medium-high heat. Lower the heat and simmer for about 7 to 9 minutes, or until just tender. Drain them thoroughly and let them cool slightly.
- Arrange the sweet potatoes in the prepared baking dish. Combine the remaining ingredients (except parsley) and pour over the sweet potatoes.
- Bake in the preheated oven for 20 to 30 minutes, or until hot and bubbling.
- Garnish with parsley or cilantro, if desired.
