Acorn squash rings are baked to perfection with a delicious brown sugar and orange juice glaze. The bright colors of the squash and sweet glaze make it a fabulous dish to serve with ham or pork, or make the dish part of your holiday feast.

Recipe Variations

  • Change the flavor profile slightly by replacing the corn syrup with honey or maple syrup.
  • Instead of orange juice, make the glaze with apple juice or cider.

How to Store

  • Refrigerate leftover squash rings in an airtight container and enjoy within 4 days.
  • To reheat, line a rimmed baking sheet with foil and reheat in a 350 F oven for 10 to 15 minutes, until hot.
