Carrot Muffins

These carrot muffins are made with raisins and chopped pecans, a delicious start to any morning. These muffins are delicious with an orange cream cheese spread or flavored butter.

Instructions:

Preheat oven to 350 F. Line muffin tins with paper liners.

Heat the orange juice just until it begins to boil. Remove from the heat and stir in raisins. Set aside.

In a mixing bowl, beat sugar with oil and eggs until well blended.

In another bowl, combine the flour, baking powder, soda, salt, and spices. Stir into the egg mixture just until moistned. Drain the raisins and add to the bowl along with the pecans and carrots. Fold to combine.

Fill muffin cups 2/3 full and bake for about 25 to 35 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Makes about 1 dozen muffins.
