Zucchini In Sour Cream Sauce

Ingredients
  

  • 2 pounds zucchini, cut into uniform strips
  • ¼ cup finely chopped onion
  • ½ cup water
  • 1 tsp chicken base or 1 crushed bouillon cube
  • ½ tsp dried dill
  • 2 tbsp butter
  • 1 tsp granulated sugar
  • 1 tsp lemon juice
  • 2 tbsp all-purpose flour
  • ½ cup sour cream, full fat
  • kosher salt, to taste

Instructions

  • Prepare and measure the ingredients and have them ready.

  • Combine the zucchini strips, onion, water, chicken base or bouillon, and dill in a large saucepan or Dutch oven; bring to a boil over medium-high heat. Reduce the heat, cover the pan, and simmer for 2 to 3 minutes or just until the zucchini is tender. Do not drain.

  • Add butter, sugar, and lemon juice to the undrained zucchini and remove from heat.

  • In a medium bowl, whisk the flour with the sour cream until smooth. Working quickly, whisk about half of the cooking liquid into the sour cream mixture. Return the sour cream mixture to the saucepan and place it over low heat. Cook, stirring, until the sauce is thickened. Do not boil. Taste for seasoning and add kosher salt as needed.

  • Tip: After adding the sour cream mixture, cook gently just until thickened.
